This is the last installment in my Teacher Off Duty series! It makes me just a bit sad to know that summer is quickly wrapping up, but I’ve enjoyed writing my way through the summer! I hope you’ve enjoyed it too, and if you missed Teacher Off Duty posts, you can get caught up right here.
As we begin to transition back into the “school year” mindset (at least for teachers, parents still have a few weeks!), I’m sharing an easy lunch recipe that’s perfect for summer or during the school year. I have made this easy, easy tuna salad week after week this summer, and I throw it into my lunch rotation pretty regularly during the school year as well.

I love this tuna salad recipe because its healthy, ridiculously easy, and totally yummy. I love sweet and salty combos, and with the inclusion of apples and dill relish, this is a balance of both. Because I usually decide to make this when I’m in a pinch, there are no hard boiled eggs in this recipe. I love tuna salad with hard boiled eggs, but I struggle to boil water, much less eggs, 😜 so that would take this from “easy tuna salad recipe” to “not-as-easy tuna salad recipe”. If you prefer your tuna with eggs, well, just adjust accordingly!
Best Easy Tuna Salad Recipe
This recipe makes approximately 4 servings
Ingredients:
2 small cans of tuna (or 1 large!)
1/4 cup Greek yogurt
2 tablespoons mayo
2 tablespoons Dijon mustard
1 apple, chopped
2 tablespoons dill relish
2 teaspoons dill weed
salt & pepper to taste
Directions:
Combine all ingredients in a large bowl

There’s nothing more indulgent and yummy than a good mayo-filled tuna salad, so the Greek yogurt cuts out a lot of that fat, and I find the Dijon mustard adds a little something-something. I usually grab a string cheese and a serving of crackers and call this a balanced meal!
