It’s time again for one of my favorite posts of the month! Last month, I had the honor of co-hosting the Currently link-up with Anne, but this month I’m just along for the ride while as she and Carrie take over. CELEBRATING // So much and so many! April is a big month in our family. It holds our anniversary <3 of course, but there also so many special birthdays in April! Two of my brothers, my sister-in-law, my mom, AND my dad were all born in April! So much love in one month!
CREATING // Many different food combinations to fit the requirements of my meal plan. I’ve never been a savory breakfast person, but I’ve been incorporating veggies recently. So far I’ve stuck to kale and spinach because they’re easy. I’m always wondering what else I can add though! Do you eat veggies for breakfast?
WEARING // Hopefully some items from my latest Stitch Fix! As of this writing (Sunday), it’s yet to arrive, but I peeked and my stylist is sending me some cute stuff. I didn’t send a note this time (whoops), but if the fit is right on the pieces, it could be a 5/5! It’s been a while since I’ve both gone shopping, AND had a Fix that great, so I’m hopeful. GOING // A little bit crazy with end-of-year busyness. I feel like we JUST had Spring Break, but suddenly there are only four weeks of school left. I feel like I’m living on borrowed time and it’s SHOWING. Last week my students were testing and I gave them an inches and MILLIMETERS ruler for an inches and CENTIMETERS test… And didn’t realize it until about 24 hours later. SERIOUSLY? Thankfully, I have some brainiacs and when I told them we needed to check our work they all said, “Oh yeah, we noticed that. We just thought were supposed to do the conversion from millimeters to centimeters.” My panic subsided, but we checked our work anyway. Have I mentioned that I’m NOT a math teacher? I’m an English teacher and it showed that day.😝

And I wish that I ate more veggies at breakfast… this looks like a great way to do it! Sometimes I eat leftovers of this for breakfast, which has some good protein + squash and brussels sprouts: https://boysahoy.com/one-pan-wonder-roasted-butternut-squash-brussels-chicken-sausage-bacon/. Only other way I usually get in the veggies at that time is when I have leftovers of a fritatta – I always put spinach and cherry tomatoes in those.

Lots and lots of celebrating! Your breakfast looks delicious to me. I would love to join your fit group. I need some motivation. Hang in there! I remember the last month of school as a teacher was CrAzY.
